Last year my hubby, my son and I went strawberry picking at a farm that lets you pick your own strawberries. It was a really fun experience and you get a ton of strawberries. Trying to figure out what to do with all those strawberries isn’t easy tho. So I decided to make a Strawberry Vinaigrette Recipe that goes so well with salads!
I’ve had berry salads that have some pretty good vinaigrette recipes that go with them and I wanted to come up with something that was really close to it. But I also wanted something healthy. By using my own ingredients from scratch I’m sure to keep this as clean eating as possible.
I’ve tweaked the recipe a few times and finally got perfection! This dressing is good for about two weeks. However, the beauty of this recipe is you can make a few batches of it and freeze for later. The trick to this is peeling the strawberries. I do this because I don’t like a ton of seeds in my dressing. Who wants seeds stuck in their teeth? No thank you!
But when I’m in a time crunch I’ve left the seeds on and it comes out just as good. And if you really want to save time, get this strawberry slicer!
This recipe makes about 1 1/3 cups. Serving size is 2 Tablespoons.
- 2 – Tablespoons honey (may need to use a little more if strawberries aren’t sweet enough)
- 1/2 – Pound fresh strawberries (peeled-optional)
- 2 – Tbsp extra virgin olive oil (I use organic)
- 2 – Tablespoons apple cider vinegar
- 1 – a dash of fresh ground Himalayan salt
- 1 – a dash of fresh ground pepper
Place all ingredients in a blender or food processor and blend until smooth. Add honey to taste if needed.
Voila! Easy right?!
