Almond Butter Cups Recipe

  1. 7 oz. dark chocolate (not to exceed 70%)

  2. 1/2 cup natural almond butter (I use a super-smooth blend)

  3. 2 Tbsp. honey

  4. 1 Tbsp. powdered sugar

  5. 1/2 tsp. vanilla extract

  6. 1/4 tsp. fresh ground pink Himalayan salt

Directions Put all the chocolate in a microwave safe bowl and microwave in 45-second intervals, stirring in between until all chocolate is melty smooth. Line a mini cup muffin tray with mini liners. Spoon approximately one teaspoon of the chocolate in the bottom of each cup. Mix the almond butter, honey, powdered sugar, vanilla, and salt together until smooth to make the filling. Scoop out a teaspoon of the almond butter filling and roll it into a ball with your hands. Place in the cup filled with chocolate and gently press down to flatten out a bit. Repeat this for all cups.
