I don’t know about you, but I love a great taco salad. One great place to try is Chipotle. They have pretty darn good healthy options and hey, if it’s cheat day, they got some fabulous unhealthy options as well. >wink, wink<
If you want a healthy option this is a super fabulous and super tasty healthy taco salad recipe. It’s easy and oh so delicious. You will make your own taco seasoning. Which is WAY better because then you know exactly every single ingredient that is going into your food.
Although, if you don’t have time to make your own, you could probably try Chipotle. They have reasonably healthy meal options too.

- 1 lb of ground beef (preferably grass fed)
- Taco Seasoning – see below
- 8 Cups Romaine Lettuce
- 1 Large Tomato
- 2 Tablespoons Shredded Cheese
- 1 Avocado
- Salsa (optional)
- 3 tsp. Chili Powder
- 1/2 tsp. Garlic Powder
- 1 tsp. Paprika
- 1/2 tsp Onion Powder
- 1 tsp. Cumin Powder
- 1/2 tsp. Oregano
- Himalayan Sea Salt (about 12 twists or 1/4 tsp)
- Black Ground Pepper (about 12 twists or 1/4 tsp)
Brown ground beef in a skillet. When the meat is about halfway done, add taco seasoning. Finish cooking meat. On a plate, arrange 2 cups of lettuce. Top with 1/4 of the taco meat 1/4 of the tomato and 1/4 avocado. Spoon some salsa on top as the dressing. This is great to make ahead for lunches throughout the week.
