Today’s recipe is a super easy one and it is great to make so you have breakfast for the entire work week. I used a baking dish for this, but I’ve also done this in a muffin tin, which works pretty nice. Sometimes you just gotta use what’s convenient. 😉
This dish makes 5 servings
- 10 Eggs
- 1 Tablespoon Coconut Oil
- 1-2 Cups of Spinach
- 1 Cup of Bell Peppers (diced, any color you prefer)
- 10 pieces of cooked bacon (cut into tiny pieces)
- 1 cup yellow onions (diced)
- 1/4 Teaspoon garlic powder
- 1 Teaspoon Himalayan Salt
- Ground Pepper (use your own preference of pepper)
First, cook the bacon. I like to bake it in the oven. It’s less mess, it doesn’t stink up the house and cooks perfectly. AND it only takes about 15 minutes. Chop onions and bell peppers while bacon is cooking. Saute onions and bell peppers in coconut oil for 2-3 minutes. Add the spinach and saute until spinach becomes wilted. Set aside.
Next, chop the onions and bell peppers while the bacon is cooking. Saute the onions and bell peppers in coconut oil for 2-3 minutes. Add the spinach and saute until spinach becomes wilted which is about 1-2 minutes. Set aside.
Once the bacon is done, set aside to cool.
Add all the eggs to a large bowl and beat. Add garlic powder, Himalayan salt, pepper, spinach, and peppers to the eggs. Chop the bacon into small pieces and add to the egg mixture and mix well. Finally, add the mixture to a cooking-sprayed baking dish and cook in the oven at 425 degrees for 35 minutes. The egg-bake may take longer or shorter depending on the dish you use, so be sure to check on it regularly.
Once finished baking, cut it into 10 pieces. One serving is 2 pieces. Serve right away and/or put the remaining in containers for meals throughout the week.
