I don’t know about you but I just love summer. Lakes, fishing, bonfires, bike rides, gardens, grill outs and yummy fresh food! This super healthy berry salad recipe reminds me of summer and will easily become your new favorite salad. It’s definitely mine!!

P.S. It doesn’t have to be summer to enjoy this awesomeness either.

You’ll only need a few strawberries and blueberries for this recipe. This is nice because you could make this in bulk and pair it with your favorite protein for weekly lunches. I pair this with my delicious Strawberry Vinaigrette¬†Recipe.

This salad also has the Red, White, and Blue colors so it would be a perfect side dish for your 4th of July BBQ!

Makes 1 Serving

Ingredients

  • 1 1/2 – Cups spinach (or mixed greens)
  • 1-2 – Sliced strawberries
  • 1/4 – Cup Blueberries
  • 1-2 – Tablespoons feta cheese
  • 1-2 – Tablespoons Walnuts or pecans (if you can get candied even better)
  • 2-3 – Tablespoons Strawberry Vinaigrette

Directions

Wash strawberries, blueberries and spinach. Put spinach or mixed greens on a plate or in a bowl. Sprinkle salad with strawberries, blueberries, cheese, and nuts. Top with Strawberry Vinaigrette. Enjoy alone or make it a meal and add some of your favorite protein.
